There are more than 300 short grain rice varieties in Korea. Each variety has different characteristic in terms of color, shape, size, flavor, fragrance, stickiness, taste and texture. Chef Andrew Choi wanted a blend of Golden Queen, Samgwang and Saechungmu to his preferred ratio to have a perfect mix of fragrance, taste and texture.
Rice begins to oxidize as soon as it's milled. To ensure flavor and nutrition, we mill per your selection—brown, 30% polished, 50% polished, 70% polished, or white rice—and ship it promptly.
Cooking Rice on the Stovetop:
Rinse rice 3–5 times until water runs mostly clear. Use a 1:1 ratio of rice to water (a bit more for brown rice). Boil uncovered over high heat. Once most of the water has been boiled off, reduce heat to low, cover, and simmer for 10 minutes. Then turn off the heat and let rest for another 10 minutes before fluffing.
Storage Note: Keep refrigerated. Avoid storing near strong odors. Rice is sensitive to moisture and scent, so use a sealed container.
