Because they're built almost entirely from Korean rice, the noodles carry a mild, faintly sweet flavor that lets your broth and toppings lead. At just 1mm thick they cook in two minutes and stay tender-firm, and as an air-dried noodle they're gentle on digestion. Chef's tip
These shine anywhere thin noodles belong, hot or cold — because they hold their chew without turning soft, they're as good in a steaming bowl as they are chilled. Serve them in a warm anchovy or clam broth for janchiguksu, Korea's everyday noodle soup; toss them cold in a sweet-spicy gochujang (red chili paste) sauce for bibimguksu; or chill them in a nutty soybean broth for kongguksu. They're just as good in golbaengi-muchim, a spicy whelk-and-noodle salad. Beyond the Korean table, treat them like a gluten-free angel hair: a light sesame-and-scallion noodle salad, a quick brothy bowl with vegetables, or a base for whatever sauce is in the fridge.
