The youngest of the three
Master Ki Soondo's soy sauces age into three characters: jinjang waits five years or more, ganjang one to three, and cheongjang less than one. That short aging is the whole point — it keeps cheongjang pale, and its flavor bright, clean, and mild, from just soybeans, bamboo salt, and water.
Clear color, clean taste
Because it hasn't spent years deepening in the jar, cheongjang seasons a dish without changing how it looks. Where a darker soy sauce would tint a clear broth or muddy a pale side dish, this one adds savory depth and leaves the color where it was. The bamboo salt and slow, natural fermentation still give it a clean, rounded taste — just in a lighter register than her aged sauces.
How to use it
Reach for cheongjang whenever a dish needs seasoning but not color: clear soups like radish or seaweed soup, steamed egg (gyeranjjim), blanched namul, and light vegetable banchan. It's what Korean cooks use when they want the ingredients to stay bright and the broth to stay clear. Season gradually and taste as you go — a little is enough to lift a dish without weighing it down.
세 간장 중 가장 어린 장
기순도 명인의 간장은 숙성에 따라 셋으로 나뉘어요. 진장은 5년 이상, 간장은 1~3년, 그리고 청장은 1년 미만. 짧게 숙성하는 게 바로 핵심이에요. 그래서 청장은 색이 옅고, 맛은 밝고 깔끔하고 부드럽죠. 재료는 콩·죽염·물, 그대로고요.
